As an Oracle Partner, how do I update Production without overwriting existing data and only update necessary fields?

Rapid4Cloud checks for existing data before it updates Oracle. If a record exists then Rapid4Cloud will modify it with the changed or additional data you provided, checking that it is valid in the process. If the record doesn't exist then Rapid4Cloud will create it.
